    Blueberry Toast

    Blueberry Toast! Blueberry compote is spooned over a creamy spread served atop perfectly toasted bread for a simple yet elegant breakfast or brunch treat!

    Toast for breakfast is nothing new or groundbreaking, but one things for sure: People have gotten pretty serious about their breakfast toast.

    Avocado toast, ricotta toast and other versions in both sweet and savory variations can be found all over the internet and even in some finer dining establishments all over the world. So why not add one more fancy toast to the mix?

    My Blueberry Toast is a sweet, fruity take on the popular brunch item: Crunchy artisan bread is toasted until crisp, then slathered in a honey and lemon zest-infused mascarpone cheese spread before being topped with a homemade blueberry compote. Drizzled with honey and finished off with another sprinkle of lemon zest, this toast will become a craving worth satisfying!

    Ingredients

    • Bread. A nice, rustic loaf is great for this, but feel free to use whatever bread you like for toast.
    • Mascarpone Cheese. Mascarpone is a mildly sweet, spreadable cheese that is used in many desserts. If you can't find mascarpone, cream cheese can be used in its place.
    • Plain Greek yogurt. Yogurt helps to loosen up the mascarpone mixture so
    • Honey
    • Lemon zest & juice. Always zest your lemon before juicing! The zest is where all the flavor lives in those essential oils.
    • Blueberries. Fresh or frozen both work here.
    • Granulated Sugar

    Instructions

    Make the Blueberry Compote

    Place 1 cup of blueberries, sugar, lemon juice and 1 tablespoon of water in a small saucepan over medium heat and stir to combine.

    Bring the mixture to a simmer, stirring often until the berries soften and begin to break down, lightly mashing the berries to release their juice. Add the remaining ½ cup of blueberries and cook for another minute or two until the mixture is thick and syrupy.

    Remove it from the heat and set it aside.

    Note: If you're in a rush, store bought blueberry jam is a great alternative to a homemade compote.

    Make the Mascarpone Spread

    Meanwhile, in a small bowl, mix together mascarpone cheese, Greek yogurt, lemon zest and honey until smooth and spreadable.

    Set the mixture aside.

    Assemble Blueberry Toast

    Toast 2 pieces of you favorite bread. I like a nice, crusty artisan loaf for this.

    Tip: You could also use something like my Cinnamon Swirl Pumpkin Yeast Bread or Roasted Apple Bread, which would add delicious flavor!

    Spread half the mascarpone mixture on each slice of bread. Top each piece with a dollop of blueberry compote.

    Before serving, drizzle each piece with honey and sprinkle with extra lemon zest if desired.

    FAQ's

    Can Blueberry Toast be made ahead?

    With the exception of the toasted bread, the separate elements of Blueberry Toast can be made ahead. Once the mascarpone spread and blueberry compote are made, place them in separate, airtight containers and refrigerate them for 2-3 days until ready to assemble.

    What is a good substitute for mascarpone?

    In terms of flavor, crème fraîche is said to be the closest due to its tanginess. However, cream cheese will work in place of mascarpone for the purposes of this spread, and it's the easiest to find.

    What is compote used for?

    If you don't end up using all of your blueberry compote, it's also delicious on yogurt and other breakfast items like pancakes, waffles and blintzes. It's also fantastic on desserts like cheesecake and ice cream!

    Variations & Substitutions

    Spice things up by trying these variations!

    • Switch up your compote by using different berries such as raspberries, strawberries or blackberries.
    • Add a sprinkle of chopped herbs like mint, basil or rosemary.
    • Give a little extra crunch by sprinkling with a bit of granola, chia seeds or flax seeds.

    Diet-Specific Substitutions

    • Vegan or Dairy-Free: Use a plant-based cream cheese and yogurt instead of mascarpone and regular yogurt. Swap out the honey for a vegan sweetener such as date syrup or agave syrup.
    • Gluten-Free: Use gluten-free bread for your toast.

    • 2 teaspoons honey
    • ¼ teaspoon lemon zest
    • 2 slices bread
