    Turkey Meatball Subs

    Last Sunday, Steve and I decided to mix it up and replace Pasta Sunday for Meatball Sunday (although we did sneak in a little pasta as well). And boy was it a good decision! 

    A trip to the grocery store, some recipe browsing, and a small mess in the kitchen later... we had this:

     

    Yum. Just yum.

    For the meatball recipe, I pulled some inspiration from Rachael Ray's recipe for Roast Chicken Sausage Meatballs , but stayed true to form by adding my own twist and working with the ingredients I had. (We also made them gluten free so the hubby could enjoy them, too.)

    Marvelous Meatballs

    Ingredients
      

    • 1 lb ground turkey meat
    • ½ cup italian parsley finely chopped
    • 1 tablespoon dried rosemary
    • 1 teaspoon garlic powder
    • 1 teaspoon onion powder
    • 3 cloves garlic grated or minced finely
    • 1 cup grated parmesan
    • ¾ cup bread crumbs we used Kinnikinnik's Gluten Free
    • 1 egg
    • salt
    • olive oil

    Instructions
     

    • 1.Preheat oven to 450 degrees.
    • 2.Combine the all ingredients. *If the mixture seems too wet, add a handful of bread crumbs and mix together.
    • Form meatballs by scooping and rolling, or by using a handy dandy scoop like mine. Coat meatballs in a couple of tablespoons of olive oil and arrange on a parchment lined baking sheet. Roast 17 to 18 minutes until juices run clear.

    Simple Sauce

    Ingredients
      

    • ½ an onion chopped
    • 1-2 cloves garlic minced
    • 1 can diced Italian style tomatoes
    • 1 tablespoon olive oil
    • A pinch or two of italian herbs & spices {I like to use the kind that comes in a little grinder}

    Instructions
     

    • Heat olive oil in a skillet over medium heat. At onion and garlic and saute until translucent and aromatic.
    • Meanwhile, puree diced tomatoes in food processor or blender to desired consistency. (My hubby tends to like sauce with no chunks, so we give it a good blitz in the blender.)
    • Add tomato puree to skillet and simmer until reduced to a thickened saucy consistency.

    Ingredients
      

    • Fresh mozzarella sliced
    • Baguette we used Against the Grain Gluten Free Baguettes
    • Marvelous Meatballs
    • Simple Sauce

    Instructions
     

    • Slice baguette lengthwise. Fill with desired amount of meatballs. Spoon marinara sauce over meatballs. Cover with sliced mozzarella.
    • Tightly wrap sub with aluminum foil and return to hot oven for approximately 10-15 minutes or until cheese is melted.
    • Remove from oven, unwrap sandwich and prepare yourself for fabulousness!
