Mini Carrot Cakes

Step 1

Preheat the oven to 350. Prepare 6 3-inch mini cake pans by greasing liberally with non-stick cooking spray or butter.

Step 2

In a large bowl, mix melted butter or oil with granulated & brown sugars. Add eggs and vanilla; whisk until fully incorporated.

Step 3

Add flour, baking soda, cinnamon, ginger, nutmeg & salt; mix ingredients together until combined.  Fold in grated carrots & pecans until the mixture is uniform.

Step 4

Divide the batter evenly into greased tins. Bake for 22-25 minutes.  Let cakes cool for about 10-15 minutes before removing.
