Strawberry & Champagne Granita

Make Simple Syrup
In a saucepan, stir together water and sugar until combined.; simmer until sugar is completely dissolved and the mixture is slightly thickened. Set aside to cool for 15 minutes.
In a food processor, add strawberries, lemon juice, orange juice, champagne & cooled simple syrup. Blend until completely smooth. Pour the mixture into an 8x8 inch dish.
Freeze mixture for 40 minutes, then whisk. Freeze again for another 55 & whisk once more. Finally, freeze until solid, 3 hours. Use tines of a fork to create flaky ice crystals.
