Bake squash, cut side down, on foil lined baking pan for 25-30 minutes.

Make vinaigrette: Whisk together olive oil, cider vinegar, maple syrup & salt.

Toss together cooked quinoa, toasted almonds, cranberries & vinaigrette in a large bowl.

step 5

Fill cooked acorn squash halves with quinoa, bake 10-12 minutes until warmed through.
