Ingredients
2eggs
1tablespoonmilk or water
¼cupdiced onion
About 2 oz. ground chorizo sausage {I use ground vegan sausage links}
2tablespoons{or more} shredded cheese such as Mexican cheese blend
Cilantro for garnish
Instructions
Heat a teaspoon of olive oil in a skillet over medium-high heat. Add onion to skillet and saute for about 2-3 minutes or until it begins to soften.
Add ground chorizo and cook until no longer raw*, then carefully drain any fat and set aside.
Meanwhile, crack eggs directly into the OXO Microwave Omelet Maker. Add milk or water and lightly beat eggs with a fork.
Microwave for 2 to 2 ½ minutes until egg is fluffy and cooked through.
Remove from microwave and top with cheese and chorizo filling.
Fold omelet maker over and gently slide omelet out onto plate.
Top with a drizzle of yogurt or sour cream and a sprinkle of cilantro if desired.
Notes
The vegan sausage I use comes in links. I grind the links in the food processor and then cook until slightly browned and heated through.
