Spiced Apple Granola

The warm spices, pecan bits and dried apple add a hint of seasonal flavor that will quickly make this your preferred fall snack whether you much on it by the handful, enjoy it as a cereal or sprinkle it over yogurt for a delicious treat.

Ingredients

  • 2 ½ cups rolled oats
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ¼ teaspoon ground ginger
  • Pinch of salt
  • ½ cup toasted chopped pecans
  • ¼ cup ground flax & chia mix
  • 2 tablespoons coconut oil
  • ¼ cup maple syrup
  • ¼ cup honey
  • 1 teaspoon vanilla extract
  • ½ cup chopped dried apples or apple chips

Instructions

  • Preheat the oven to 375°F. Line a baking pan with parchment paper or a silicone baking mat. Set aside.
  • In a large bowl, combine oats, cinnamon, nutmeg, ginger, salt, pecans, flax & chia. Set aside.
  • In a small saucepan, bring coconut oil, maple syrup and honey to a boil, then reduce heat to medium-low and allow to simmer for about 3-4 minutes. Remove from heat and stir in vanilla extract.
  • Pour the mixture over the oats and quickly stir until everything is coated and combined.
  • Scoop out onto lined baking pan and bake for about 15 minutes or until just golden and fragrant.
  • Remove from oven and allow to cool completely before stirring in dried apples or apple chips. Store in an airtight container.

Notes

Variations
  • Use a chai spice blend or your favorite blend of spices to give it some extra flair.
  • Try out a different nut such as walnuts, almonds or hazelnuts.
  • Add shredded coconut for extra texture and flavor.
Diet-Specific Substitutions
  • Vegan: Omit honey and use maple syrup in its place.
  • Gluten-free: Make sure to use certified gluten free oats.
