- 2 ears grilled corn kernels removed
- 1 medium English cucumber halved, seeded & sliced
- ½ cup slaw mix {I use "Cruciferous Crunch" from Trader Joe's}
- 1 piece of grilled salmon flaked
For Dressing
- ¼ cup reduced sodium soy sauce or tamari
- 2 tablespoons sweet chili sauce
- 1 tablespoon rice vinegar
- ½ teaspoon sesame oil
- Optional: Sesame seeds chopped scallions
In a large bowl, combine combine the grilled corn kernels, cucumber, and slaw mix. Add the flaked, grilled salmon on top.
In a smaller bowl, whisk together all ingredients for the dressing until well combined.
Pour over the salad mixture and toss gently as not to break up the salmon too much.
Sprinkle with sesame seeds and chopped scallions if desired.
