Spiced Pear Oatmeal Bake

Ingredients

  • 3 tablespoons melted coconut oil divided
  • 1 tablespoon ground flax
  • 2 tablespoons water
  • 2 cups rolled oats {I used gluten-free}
  • ½ cup chopped pecans
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • ½ teaspoon ground ginger
  • 1 Pinch of salt
  • 1 ¾ cups unsweetened almond milk {or milk of your choice}
  • ¼ cup maple syrup
  • 1 tablespoon vanilla extract
  • 1 large pear peeled, cored and diced

Instructions

  • Preheat the oven to 350 degrees. Grease a 9x13 inch baking dish with 1 tablespoon of melted coconut oil. Set aside.
  • In a small cup, mix together the ground flax and 2 tablespoons of water and allow it to "gel" while you prep the rest of the ingredients.
  • In a large bowl, mix together the oats, pecans, cinnamon, ginger, baking powder and salt.
  • In a small bowl, combine the almond milk, maple syrup, vanilla extract, gelled flax mixture and remaining coconut oil.
  • Pour the wet mixture into the dry mixture and mix until well-combined. Stir in the diced pear.
  • Bake for 25-30 minutes or until the top is lightly browned and the edges are bubbling. Remove from oven and allow to sit for at least 15 minutes if you're planning on cutting into squares; otherwise, scoop with a spoon and eat immediately.
