1 Large skillet
1 Potato masher optional
- 2 tablespoons olive oil
- ⅓ cup chopped onion
- 2 large garlic cloves
- 28 ounces San Marzano Tomatoes canned
- ½ teaspoon sea salt
- ½ teaspoon cracked black pepper
- ¼ cup fresh basil leaves chopped
Heat about 2 tablespoons of olive oil in a skillet over medium heat.
Add chopped onion and cook for 3-5 minutes or until slightly softened. Add garlic and cook for another minute.
Add San Marzano tomatoes. Using a wooden spoon (or a potato masher, which is my favorite tool for breaking up meat and large pieces while cooking), mash the whole tomatoes to break them into smaller pieces. Add salt and pepper to taste. Cover the pan with a lid. Allow the mixture to simmer for 15-20 minutes or until the desired thickness is reached.
Stir in chopped, fresh basil just before serving.
Tip: Prefer a smooth sauce? Use an immersion blender to blend the sauce directly in the pan to your liking.
Variations
- Give it some spice with ½ a teaspoon (or more!) of red pepper flakes.
- Make it a Bolognese inspired meat sauce by browning up ground beef or Italian sausage before adding the tomatoes.
- Add a splash of heavy cream and Parmesan cheese for an alla vodka style pink sauce.
