Ingredients

  • 1 frozen flatbread crust or thin pizza crust
  • 1 tablespoon coconut oil
  • ¼ of a medium onion sliced
  • 1 cup frozen tricolor bell peppers*
  • ½ cup frozen pineapple chunks
  • ¼ to ⅓ cup sweet chili sauce**
  • cup mozzarella cheese
  • 1 pre-cooked spicy Italian sausage link* cut on the diagonal

Instructions

  • Preheat the oven to 450 and bake flatbread crust for 12-15 minutes {or according to package directions} until desired crispness is achieved.
  • Meanwhile, heat coconut oil in a large skillet over medium-high heat. Add onions and cook for 4-5 minutes or until translucent and beginning to caramelize.
  • Add peppers and pineapple chunks and cook until fully defrosted and beginning to brown.
  • Remove the crust from the oven and spread sweet chili sauce evenly over top. Scoop cooked onions, peppers and pineapple onto the crust and distribute evenly. Sprinkle cheese on top.
  • Meanwhile, add sliced sausage pieces to the hot pan to brown them a bit {you may need a little bit more oil}. Cook for about 3-4 minutes or until beginning turning golden brown around the edges. Place sausage pieces on flatbread.
  • Return flatbread to oven for another 4-5 minutes until the cheese is melted. Serve hot!

Notes

*If you can't find frozen tricolor peppers, use fresh ones. You may use whatever color pepper you like!
** Sweet chili sauce can usually be found in the Asian or ethnic section of the grocery store.
***I used a vegan sausage product, but you can use whatever type of pre-cooked sausage you prefer. Chicken sausage would be good here, too!
