Ingredients

  • 2 cups all purpose flour
  • ¼ cup +1 tablespoon cocoa powder
  • teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup mashed ripe bananas
  • ¾ cups granulated sugar
  • 2 large eggs
  • ½ cup vegetable oil or melted coconut oil
  • cup Greek yogurt
  • 1 cup chocolate chips milk, semi-sweet, or dark

Instructions

  • Preheat the oven to 350 degrees. Lightly grease or spray the bottom of a 9x5 inch loaf pan with cooking spray. Set aside
  • In a large bowl, sift or whisk together flour, cocoa powder, baking powder, baking soda and salt.
  • In a medium bowl, combine mashed banana, eggs, sugar, oil and yogurt until well-mixed.
  • Add the wet mixture to the dry mixture, folding it in carefully just until combined. {Don't over mix or you'll end up with gummy or tough banana bread.}
  • Spread the batter evenly into the prepared loaf pan and bake for 55-65 minutes. At around 35 minutes, lightly tent the pan with a piece of foil to avoid overbaking the top. Checking for doneness at 50-55 minutes with a long skewer or toothpick. {It should come out clean or with a few sticky crumbs.}
  • Remove from oven and allow to cool for at least 20-30 minutes before slicing for cleaner slices. {Slicing too early may result in a crumbly mess.}
