Preheat oven to 375 degrees. Heat 1 tablespoon olive oil in a large, oven-safe nonstick skillet over medium-high heat.
Season chicken breasts on both sides, then add to hot pan. Cook 3-4 minutes on each side, then transfer the skillet to the oven and bake until completely cooked through, about 10-15 minutes depending on the thickness of your chicken breasts.
Meanwhile, cook Green Giant Veggie Spirals™ Carrot according to package directions, drain and keep warm.
When the chicken is cooked through, remove from skillet and set aside. Cover to keep warm.
Add remaining tablespoon of olive oil and garlic to pan, and saute over medium heat. Cook garlic for about 1 minute until fragrant. Turn off heat.
Add warm carrot spirals, parsley and cheese, tossing together gently until well combined.
When ready to serve, place onto serving plate and top each serving with cooked chicken breast, sliced if desired. Sprinkle with extra cheese and parsley to garnish.
