    Their "new take on noodles" come frozen and are prepared in just minutes, making them ideal for mid-week meals. {I scooped a few packages up in the frozen vegetable section at Walmart.} What I love about them most is the fact that they come without sauce or seasonings {such a rare find!} so you can prepare them however you see fit. Whether you use them for entrees like noodle bowls or as a swap for "pasta" recipes, as add-ins to soups or as the base for an easy side dish, they are such a great time saver to have on-hand.

Simply microwave the carrot spirals {right in the package, if you wish!} for 6-7 minutes, then toss them into a skillet to coat with flavorful garlic and Parmesan cheese. Cook up a few Italian herb-seasoned chicken breasts {fish or shrimp would work great here, too!} and serve them over the carrot spirals to round out the meal. In under 30 minutes, you'll have a dinner-worthy dish with minimal hassle, which is basically my love language.

    Garlic & Parmesan Carrot Spiral Bowls

    Ingredients
      

    • 2 Tablespoons olive oil divided
    • 2 boneless skinless chicken breasts
    • 2 teaspoons Italian seasoning blend of your choice
    • Salt to taste {if seasoning doesn't contain salt}
    • 1 {12 oz.} package Green Giant Veggie Spirals™ Carrot
    • 2 garlic cloves grated or minced
    • 3 Tablespoons chopped fresh parsley
    • ⅓ cup Parmesan cheese

    Instructions
     

    • Preheat oven to 375 degrees. Heat 1 tablespoon olive oil in a large, oven-safe nonstick skillet over medium-high heat.
    • Season chicken breasts on both sides, then add to hot pan. Cook 3-4 minutes on each side, then transfer the skillet to the oven and bake until completely cooked through, about 10-15 minutes depending on the thickness of your chicken breasts.
    • Meanwhile, cook Green Giant Veggie Spirals™ Carrot according to package directions, drain and keep warm.
    • When the chicken is cooked through, remove from skillet and set aside. Cover to keep warm.
    • Add remaining tablespoon of olive oil and garlic to pan, and saute over medium heat. Cook garlic for about 1 minute until fragrant. Turn off heat.
    • Add warm carrot spirals, parsley and cheese, tossing together gently until well combined.
    • When ready to serve, place onto serving plate and top each serving with cooked chicken breast, sliced if desired. Sprinkle with extra cheese and parsley to garnish.
