When you have a lifestyle where you find yourself cooking at least 6 days a week, you gain a major appreciation for products that make life easier.
Frozen veggies and grains. Jarred sauces. Spice blends. On days when the last thing I want to do after a full day in the kitchen is fiddle with fussy ingredients, I am ever so thankful for these little time savers that allow me to cook an uncomplicated {yet healthful} dinner.
It wasn't too long ago that I was spiralizing allllll the veggies for a healthier approach to "noodle" dishes. I still love my spiralizing tool, I really do. But again... there are days where adding even one more step to dinner prep {or one more thing to my overflowing sink} feels like it just might send me over the edge.
And then, like an answered prayer, Green Giant® introduced Veggie Spirals. Can I get a Hallelujah!?
Their "new take on noodles" come frozen and are prepared in just minutes, making them ideal for mid-week meals. {I scooped a few packages up in the frozen vegetable section at Walmart.} What I love about them most is the fact that they come without sauce or seasonings {such a rare find!} so you can prepare them however you see fit. Whether you use them for entrees like noodle bowls or as a swap for "pasta" recipes, as add-ins to soups or as the base for an easy side dish, they are such a great time saver to have on-hand.
Topped with your favorite protein and jazzed up with a handful of ingredients, Veggie Spirals allow you to create a complete, nutritious meal in no time at all, which we know is always a plus!
Garlic & Parmesan Carrot Spiral Bowls with Chicken are just one of many ways to enjoy veggie spirals. Simply microwave the carrot spirals {right in the package, if you wish!} for 6-7 minutes, then toss them into a skillet to coat with flavorful garlic and Parmesan cheese. Cook up a few Italian herb-seasoned chicken breasts {fish or shrimp would work great here, too!} and serve them over the carrot spirals to round out the meal. In under 30 minutes, you'll have a dinner-worthy dish with minimal hassle, which is basically my love language.
Guess what else? Green Giant® also has Veggie Spirals available in Zucchini, Beet and Butternut Squash varieties! I have a feeling we're going to be eating a lot of curly meals around here...
There's no shame in a little shortcut, especially when the outcome is something this good. For more easy weeknight recipes ideas using Green Giant® Veggie Spirals, visit their site!

- 1 {12 oz.} package Green Giant Veggie Spirals™ Carrot
- 2 garlic cloves grated or minced

- ⅓ cup Parmesan cheese
Instructions
- Preheat oven to 375 degrees. Heat 1 tablespoon olive oil in a large, oven-safe nonstick skillet over medium-high heat.

- When the chicken is cooked through, remove from skillet and set aside. Cover to keep warm.
- Add remaining tablespoon of olive oil and garlic to pan, and saute over medium heat. Cook garlic for about 1 minute until fragrant. Turn off heat.
