  • 2 ears grilled corn kernels removed
  • 1 medium English cucumber halved, seeded & sliced
  • ½ cup slaw mix {I use "Cruciferous Crunch" from Trader Joe's}
  • 1 piece of grilled salmon flaked

For Dressing

  • ¼ cup reduced sodium soy sauce or tamari
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon rice vinegar
  • ½ teaspoon sesame oil
  • Optional: Sesame seeds chopped scallions


  • In a large bowl, combine combine the grilled corn kernels, cucumber, and slaw mix. Add the flaked, grilled salmon on top.
  • In a smaller bowl, whisk together all ingredients for the dressing until well combined.
  • Pour over the salad mixture and toss gently as not to break up the salmon too much.
  • Sprinkle with sesame seeds and chopped scallions if desired.
