Mango Pico de Gallo

- 1 cup diced mango
- ⅓ cup diced tomato
- ¼ cup finely diced red onion
- 1 tablespoon finely diced fresh jalapeno pepper
- 1 tablespoon finely chopped fresh mint leaves
- ½ lime lime juice from lime
- ¼ teaspoon sea salt
Combine all of the ingredients in a bowl. Stir well to combine. Refrigerate until ready to eat.
Serve with chips or as a topping for grilled seafood, chicken or tacos!
Tip: If you don't have fresh mango, you can use frozen mango chunks. I recommend dicing it while it's still frozen as it becomes very soft when thawed. Once diced, allow the mango to thaw and drain the extra liquid before adding the remainder of the ingredients.
Variations
- Use fresh cilantro in place of the mint for a more classic flavor.
- Add other veggies such as chopped bell peppers or corn!
- Give it a creamy element by adding diced avocado.
