Coconut Margarita Popsicles

  • 1 cup unsweetened coconut milk
  • ½ cup Cream of Coconut NOT coconut cream, see above
  • ¼ cup fresh lime juice
  • 2 tablespoons agave syrup or sugar, or honey
  • ¼ cup water
  • ¼ cup silver tequila optional
  • ¼ cup shredded coconut flakes


  • Place all ingredients in a blender (or in a bowl).
  • Blend until smooth. (Or whisk by hand until fully combined.)
  • Pour into popsicle molds.
  • Place in freezer for 3-4 hours or until frozen solid. (See notes.)
  • Carefully remove popsicles from mold once fully frozen.


  • Adding tequila to popsicles may extend the freeze time by an hour or two as alcohol can inhibit freezing.
