Ok, y'all. I'm not saying that the 3's haven't come with their fair share of parenting challenges {helloooo raging tantrums!}, but I've got to tell you that this age is just so much fun. Cole and I are fully soaking up his last summer before he starts school this fall in all the adventurous, delightful ways we can think of.
Pool time. Splash pads. Visits to the Science Museum. Trips to the library. {Because, let's be real, sometimes you want to escape the brutal heat for a while.} Rainy day movie marathons. Craft projects. And yes, we've even come to that exciting time where he's old enough to join in on some kitchen projects. THIS IS WHAT I'VE BEEN WAITING FOR MY WHOLE LIFE!
I can't think of anything more "summery" than making homemade ice cream with your kiddo and then enjoying the fruits of your labor in all its melty, drippy glory. But here's the thing: Ice cream making can be a process.
When you're cooking with kids, it's wise to streamline any steps that can cause extra messes and delays. As it is, making home-churned ice cream can cause impatience in full-grown adults! {Not that I would know anything about that personally.} There's the cooking of the custard, the cooling, the churning and the freezing. And, while the final product is usually worth the wait, I can assure you that young children will make you wish you could push a fast-forward button from the moment you say, "Hey, let's make ice cream!" to the second you scoop that first cone.
So, in an effort to make your sweet summer dreams all the more enjoyable, I'm sharing a recipe that you'll love: Easy No Churn Orange-Chip Ice Cream Sandwiches.
I know what you're thinking. That sounds like a mouthful and I will NOT commit to something complicated during what are supposed to be the lazy days of summer. But fear not, my friends, I have streamlined the process for getting these babies into your babies' little hands.
First, you'll want to start by choosing some sweet, beautiful oranges, which could prove to be a far more difficult task than you'd think considering that the U.S.' peak citrus season takes place in the wintertime. The good news is, Summer Citrus from South Africa is available during the times that our own production is at a standstill, especially when you're looking for specific types of citrus like Cara Caras and Star Ruby grapefruit. From the months of June to October, you can find all the tangy, tantalizing varieties you're craving -- no sweat.
Next, you'll want to get a BIG bowl {trust me on this one}, and let your kiddo mix together the handful of ingredients it takes to make this creamy, dreamy concoction. {Or, if you really want to keep things easy, let them belly up to your stand mixer and flip the switch.} No cooking, no cooling. Just pouring & whipping. {And depending on your child's dexterity, potentially a little splash clean up, too.}
Once everything is combined, all you have to do is pour the mixture into a baking pan {I used an 8x8 because I wanted super thick "slices" of ice cream, but you can make them thinner by using a larger pan if you'd like} and let it freeze for a few hours, which is easily the hardest part of this whole process. When you're ready to dig in, you can scoop it as you normally would... OR you can cut perfect portions to fit between a graham cracker sandwich. YES.
The orange zest infuses that condensed-milk sweetened cream with the most wonderful citrusy flavor; think Creamsicle. Giving each sandwich a little roll in mini chocolate chips also adds not only visual interest but a little texture to each bite.
The only "meltdowns" that will be happening this summer are the ones your littles will want to lap up! And the memories? They'll be as sweet as they come.

Easy No-Churn Orange-Chip Ice Cream Sandwiches
Ingredients
- 2 cups heavy cream
- 1 14 oz. can sweetened condensed milk
- Zest of 1 small orange
- 3 tablespoons fresh squeezed orange juice
- 1 teaspoon vanilla extract or vanilla bean paste
- Pinch of salt
- 10 graham cracker squares
- ½ cup mini chocolate chips
Instructions
- Prepare an 8x8 inch* baking pan by lining with foil. Set aside.
- In a large bowl, or the bowl of a stand mixer, whip the heavy cream with a hand mixer or the whisk attachment until stiff peaks form.
- In a medium bowl or large measuring cup with a spout, whisk together the sweetened condensed milk, orange juice, zest, vanilla extract and salt until fully combined.
- Slowly drizzle the condensed milk mixture into the whipped cream with the mixer on medium-low speed until it is fully incorporated -- the mixture should remain thick and somewhat fluffy.
- Carefully pour the mixture into the lined baking pan and smooth the top as evenly as possible. Place in the freezer and freeze for about 4 hours or until solid.
- When the ice cream is set, remove from the freezer and carefully cut into squares or rectangles, using graham crackers as a guide.
- Place mini chocolate chips on a small plate and, before serving, press gently to adhere the chips to the sides of each ice cream sandwich before serving. {Note: They hold better if you return the sandwiches to the freezer for 5-10 minutes, but I know it may be difficult to wait that long!} Dig in and enjoy!
