DERBY PIE

Step 1

Make pie crust. (Or unwrap if using store-bought.) Arrange in a pie dish. Refrigerate until needed. Preheat oven to 350 degrees.

Step 2

In a large bowl, whisk together flour, sugar & salt. Whisk eggs, butter, bourbon & vanilla in a medium bowl.

Step 3

Add wet ingredients to dry & whisk until combined. Mix in walnuts & chocolate chips.

Step 4

Pour mixture into unbaked pie crust; bake for 40-45 minutes until lightly golden.

Step 5

Cool before slicing. Serve with a dollop of fresh whipped cream and a sprig of mint if desired.
