"Mamaaaaaaa!" Some people start their day awakened by melodic alarms or the sounds of nature gently waking them from their slumber, but mine usually starts with a human siren alerting me that he is rested and ready to begin the day. I stumble out of bed, scoop him from his room and sleepily trudge downstairs, pausing momentarily to get my caffeine infusion coffee brewing before officially starting on "Mom-ing."
Change. {We're working on toilet training.} Feed. Dress. Email. Play. Plan. Cook {for blog.} Answer approximately 4.3 billion toddler questions. {"Whassat? Wha you do-een, Mama?"} Play some more. Rush out of the house to be somewhere on time. Come back. Lather. Rinse. Repeat.
Did you notice my morning was missing something? Yeah, I hardly ever do either until I'm just about ready to eat the steering wheel.
BREAKFAST.
When do parents eat breakfast? Too many times, the answer for me is "never", and I know that's bad! But between the whirlwind of the morning hours and the fact that I don't usually wake up hungry, it's a fact that breakfast takes a backseat in my world.

While I'm not normally impressed by kitchen gadgets, I was totally fascinated by this electric kettle that boils water faster than the microwave and safer than the stove top! You can set the temperature you need {which is key for avid tea drinkers} and hold the temp for 30 minutes. Plus, its measurement markings help with quick, precise filling AND it shuts itself off! Now, if only it could retrieve my child from his room every morning, then we'd really be in business.
- Microwave Omelet Maker: You're going to be happy that heating water isn't taking up time in the microwave, because there are WAY better things happening in there with this Omelet Maker. Scramble eggs directly in the silicone tray, pour in a splash of liquid for extra fluffiness, and zap for 2-3 minutes for a perfectly puffy omelet! {You can also steam veggies in it, too.} Just fill, fold, plate and enjoy. No extra bowls to wash, just a quick wash and you're all set. - Microwave Bacon Crisper: Ok, bacon may not be a breakfast necessity, but it sure is a luxury many would enjoy more often if it weren't so darn messy! My husband actually eats bacon almost every day {I know, I know... but he works out really hard}, and he makes it in the microwave on a regular plate, which is effective but extremely greasy. For "healthier", crispier bacon in minutes, just plop bacon on the silicone surface and let the excess grease drain into the built-in reservoir during cooking. The removable lid makes for easy & safe cleanup. BLT's anyone??
Ok, so my days may never start with the soothing sounds of nature, but at least I'll be a little more eager to head downstairs knowing that a quick, easy breakfast is minutes away with a little help from these nifty gadgets. Now... what does OXO make for potty training assistance? 😉
Cheesy Chorizo Omelet
Ingredients
- 2 eggs
- 1 tablespoon milk or water
- ¼ cup diced onion
- About 2 oz. ground chorizo sausage {I use ground vegan sausage links}
- 2 tablespoons {or more} shredded cheese such as Mexican cheese blend
- Cilantro for garnish
Instructions
- Heat a teaspoon of olive oil in a skillet over medium-high heat. Add onion to skillet and saute for about 2-3 minutes or until it begins to soften.
- Add ground chorizo and cook until no longer raw*, then carefully drain any fat and set aside.
- Meanwhile, crack eggs directly into the OXO Microwave Omelet Maker. Add milk or water and lightly beat eggs with a fork.
- Microwave for 2 to 2 ½ minutes until egg is fluffy and cooked through.
- Remove from microwave and top with cheese and chorizo filling.
- Fold omelet maker over and gently slide omelet out onto plate.
- Top with a drizzle of yogurt or sour cream and a sprinkle of cilantro if desired.
