    Are you team "Wooooo!! BACK TO SCHOOL!!!!" or team "::SOB:: Back to schoooool, already?" Because whether you're ready or not, it's that time of year again.

    Even though days spent splashing in the pool are over, it doesn't mean that enjoying refreshing, poolside snacks have to come to an end. {Especially here in Florida where it's still a bajillion degrees outside well into autumn!} In fact, the very same snacks can make the perfect after school treat for hungry kiddos when they're home from a long day of learning and playing.

    In my opinion, popsicles are never a bad idea. {Unless you have white rugs... in which case, send the kids outdoors!} Especially when they're harboring a healthy secret and taste like the beloved combo of chocolate and peanut butter.

    These Chocolate Peanut Butter Frozen Yogurt Pops are so incredibly simple and delightful, they may just become a staple in your freezer. They're the best because:

    • They're made with a handful of simple ingredients.
    • They come together in a snap in the blender.
    • You can make them in advance and keep them in the freezer for an anytime snack.
    • They contain antioxidants, fruits, veggies & natural plant fiber thanks to the addition of Barlean's genius Chocolate Silk Greens powder.
    • They'll trick your kids into thinking you're the cool mom who gives them chocolate as an after school snack.
    • CHOCOLATE + PEANUT BUTTER + MORE CHOCOLATE. Need I say more???

    As I mentioned, they're a breeze to whip up, but you know what else made them unbelievably easy to make? Zoku's Mod Pop Molds. I'll be honest, before I received these for this post I thought, "If you've seen one ice pop mold, you've seen them all.", but I'm happy to say I was mistaken. These are so much easier to use than the traditional molds I've bought in the past and, bless them, they even made them with a built-in drip guard to keep messes at bay. {Although I still recommend sending the kids outside because they WILL find a way to stain everything around them no matter how many safeguards you put in place.} Brilliant.

    Almost as brilliant as your little scholars will think you are when you serve up these pops as a post-school treat!

    Ingredients
      

    • 1 ½ cups plain yogurt of choice {I used 2% Greek but dairy-free would work, too}
    • ½ cup milk of choice {I used almond milk}
    • 1 scoop Barlean's Chocolate Silk Greens Powder
    • 3 tablespoons peanut butter
    • 1-2 tablespoons honey {to taste}
    • ½ cup semi-sweet chocolate chips
    • 1 ½ teaspoons Barlean's Culinary Coconut Oil

    Instructions
     

    • Combine the first 5 ingredients in a blender; blend until smooth.
    • Pour the mixture into ice pop molds and snap in the tops.
    • Freeze until solid.
    • When ready to dip, melt the chocolate chips and coconut oil in a microwave safe bowl in 30 second increments, stopping to stir until melted and smooth.
    • Dip the pops into the chocolate {or drizzle the chocolate over the pops}. If adding any toppings to the pops, make sure to sprinkle them on immediately as the chocolate will form a hard shell quickly.
