SUMMER IS HEEEEERE!

I say that in solidarity with all of you out there who 1. Have school-aged children who you won’t have to worry about dragging out of bed in the early morning hours for the next few months, 2. Are a teacher and will not have to drag yourself out of bed in the early morning hours for the next few months, and 3. Live in a region where people get excited about temps rising.

I, on the other hand, 1. Am with my toddler 24/7 and have daily 6-6:30am wake-ups regardless of the time of year, 2. Am no longer a teacher and most definitely do not have the summer “off” and 3. Live in Florida where we only have two seasons {hot and ridiculously hot} and am worried that I will need to get a Kevlar rash guard for my kid if it gets any hotter out.

But, just the same, I will celebrate with you because summertime brings to mind all the happy things: Popsicles, swimming pools, umbrella drinks, vacations, suntans, and bathing suits.

::: Record Scratch :::

Oh yeah… bathing suits.

Did you forget about that little detail? It might be a good time to forgo the grilled cheese sandwiches and replace the ice cream sundae with something a little lighter. {But let’s just keep those recipes in our back pockets for a rainy day, ok?}

What you won’t want to do is pass up all sweet indulgences just to avoid some of those bulg[enc]es. {I’m sorry, I couldn’t help myself.} It’s all about moderation, I say, and fruit dips like this Skinny Strawberry Mojito Dip allow for taming a sweet tooth without busting a bathing suit strap, if you know what I mean.

Fruit dips, though they sound innocent enough, can contain a lot of sugar and calories that you might as well consume while enjoying your favorite splurge treats. In this fruit dip, a few simple swaps like non-fat Greek yogurt and 1/3 less fat cream cheese lighten things up without sacrificing too much of the yum-factor. The fresh flavors of California Giant Strawberries, mint and lime make it a refreshing dip to drizzle or dunk over {more!} berries and other tropical fruit. {You can also add a splash of rum for the adult crowd, if you choose!}

Since California Giant berries are enormous, they’re also super satisfying and eye-catching as a centerpiece on any summer fruit plate!

Ingredients

  • 1 cup diced California Giant strawberries
  • 1 {5.3 ounce} cup of plain 0% Greek yogurt
  • 4 ounces reduced fat cream cheese*
  • 4-5 fresh mint leaves
  • 1 tablespoon honey**
  • Juice and zest of 1 small lime
  • {Optional} 1 tablespoon white rum***

Instructions

  • Place all ingredients in the bowl of a food processor. Process until smooth.
  • Pour into a serving dish and refrigerate for 1-3 hours to allow flavors to marry. {This will also let it set up a bit so it's not as runny.}
  • Serve with fresh fruit for dipping!

Dianna's Tips

*If you prefer a thicker consistency, you can use the entire block of cream cheese.
**Sweeten to taste depending on the sweetness of the berries.
***Rum adds a more traditional mojito flavor, but can also make the dip runnier. Proceed with caution! 🙂

      Thanks, Katie! Yes, the getaway sounds like a dream… a great escape for, say, a mom who has been potty training her toddler. Haha! ?
