SUMMER IS HEEEEERE!
I say that in solidarity with all of you out there who 1. Have school-aged children who you won't have to worry about dragging out of bed in the early morning hours for the next few months, 2. Are a teacher and will not have to drag yourself out of bed in the early morning hours for the next few months, and 3. Live in a region where people get excited about temps rising.
I, on the other hand, 1. Am with my toddler 24/7 and have daily 6-6:30am wake-ups regardless of the time of year, 2. Am no longer a teacher and most definitely do not have the summer "off" and 3. Fruit dips, though they sound innocent enough, can contain a lot of sugar and calories that you might as well consume while enjoying your favorite splurge treats. In this fruit dip, a few simple swaps like non-fat Greek yogurt and ⅓ less fat cream cheese lighten things up without sacrificing too much of the yum-factor. Skinny Strawberry Mojito Fruit Dip
Ingredients
- 1 cup diced California Giant strawberries
- 1 {5.3 ounce} cup of plain 0% Greek yogurt
- 4 ounces reduced fat cream cheese*
- 4-5 fresh mint leaves
- 1 tablespoon honey**
- Juice and zest of 1 small lime
- {Optional} 1 tablespoon white rum***
Instructions
- Place all ingredients in the bowl of a food processor. Process until smooth.
- Pour into a serving dish and refrigerate for 1-3 hours to allow flavors to marry. {This will also let it set up a bit so it's not as runny.}
- Serve with fresh fruit for dipping!
Notes
**Sweeten to taste depending on the sweetness of the berries.
***Rum adds a more traditional mojito flavor, but can also make the dip runnier. Proceed with caution! 🙂
