Thick slices of challah bread envelop melty, creamy brie cheese, sweet strawberries and peppery arugula in this easy grilled cheese that's anything but ordinary.

This recipe is naturally vegetarian and can be made gluten-free.

Ingredients
- Butter
- Thick-sliced challah or brioche
- Brie cheese
- Strawberries
- Arugula
Instructions
Heat a grill pan or skillet over medium-low heat.
Meanwhile, arrange brie, strawberries and arugula on one slice of bread. Top with second slice of bread. (Yep, I just told you how to assemble a sandwich.)
Melt butter on grill pan or skillet and place sandwich on pan.
Place a press on top of the sandwich and heat for about 2-3 minutes.
Carefully flip and repeat the process on the other side for another 2-3 minutes or until the cheese becomes melty.
Tip: Don't have a press? Simply use a clean, inverted plate weighed down with a can to push down on the sandwich.
Remove remove from pan, cut half with a sharp knife. Serve hot.
Recipe FAQ's
Yes! Brie has a thin, white rind that helps keep it safe from microorganisms during the aging process, but it is totally edible and actually adds a little earthiness to the otherwise buttery and rich cheese.
You can use just about any bread for grilled cheese, but my favorites include sourdough (for the nice tang and crunchy crust), challah or brioche, which are fluffy and add richness for an extra decadent sandwich.
