    Churro Truffle Bombs

    Churro Truffle Bombs! Smooth & creamy chocolate is tucked into a bite-sized ball of dough, coated in cinnamon-sugar and baked to perfection in these easy-to-make treats. The surprise chocolate center will delight everyone who takes a bite! Made with a handful of ingredients, they'll become a staple when you're looking for an indulgent treat.

    Now that April is on its way out {HOW?}, May is comin' in hot with all kinds of food-heavy occasions like Cinco de Mayo, the Kentucky Derby, Mother's Day and Memorial Day. I couldn't decide which occasion I wanted to share a recipe for today, so I polled my people over on Instagram stories and the answer was clear as a bottle of Patron Silver. Cinco it is!

    Generally speaking, I can't say we do much celebrating on May 5, especially now that we are responsible adults parents. In fact, last time we tried to participate by getting tacos and margaritas like all the cool kids do, we found ourselves at the tail end of a very long line at a Mexican-ish restaurant, got too hungry to wait, and wound up having sushi across the way instead.

    But, if you know me at all, you know that it doesn't take much arm-twisting to get me to cook or bake a themed dish. Or drink a margarita. Or share a moon crater-sized molcajete of guacamole. Basically, there's no reason why I shouldn't have my own Cinco celebration this year, especially one that requires minimal effort in looking socially acceptable and includes Churro Truffle Bombs.

    What are Churro Truffle Bombs, you ask? Well, they're pizza dough enveloping a piece of chocolate, oiled up in melted butter, coated in cinnamon-sugar and baked until they're transformed into a tiny ball of golden, melty magic. You didn't read that wrong. It only takes 4 simple ingredients {5 if you count cinnamon and sugar as two separate items} to go from zero to dessert in no time flat.

    The cinnamon-sugar coating gives them that warm, nostalgic flavor that everyone loves about churros without having to pull out a vat of oil for frying. While churros are often served with a thick chocolate dipping sauce, the chocolate "dip" for these Churro Truffle Bombs is hidden on the inside, creating a little pocket of creamy sweetness. Serve them up with a side of salted caramel sauce or maybe even Kahlua-infused whipped cream to really take things over the top.

    While these certainly make a treat fit for celebrating, you don't have to wait for Cinco de Mayo to stuff your face with these babies. More importantly, you don't have to wait in any kind of line!

    Churro Truffle Bombs

    These bite-sized churro balls are packed with sweet and creamy chocolate, then rolled in cinnamon sugar. Dip in a homemade caramel sauce for a sinfully sweer dessert.

    Ingredients

    • 1 pound pizza dough store bought or homemade
    • 20 unwrapped chocolates {see notes}
    • 3 tablespoons butter melted
    • ½ cup cinnamon sugar {½ cup sugar + 1 teaspoon cinnamon}
    • Optional: Caramel Sauce for dipping or Kahlua-infused whipped cream

    Instructions

    • Preheat the oven to 375 degrees. Brush 20 mini muffin tin wells with butter, or spray with non-stick cooking spray. Set aside.
    • On a lightly floured surface, roll out the pizza dough into a rectangle, about ¼ inch thick. Using a pizza cutter, slice the dough into 5 columns and 4 rows to make 20 pieces.
    • Place a piece of chocolate in the center of each dough square and wrap it in the dough, making sure there are no gaps so the chocolate doesn't run out during baking. Continue until all 20 pieces of dough are filled with chocolate.
    • Dunk each ball of dough in the melted butter, allowing the excess to drip off. Roll in cinnamon sugar to coat completely. Place each ball of dough in a muffin tin well.
    • Bake for 10-12 minutes or until the dough is fully cooked. Cool slightly before serving {the chocolate in the center will be very hot!}. Serve with caramel sauce for dipping or Kahlua-infused whipped cream.

    Notes

    I tried these using a few different types of chocolate, including good quality truffles. While the truffles still worked, they also liquefied completely and some of the chocolate leaked out of the dough during baking. I recommend using a thick chocolate like a Hershey's Kiss -- you can fit two in there if you put them back to back. {I used Hershey's Chocolate Eggs leftover from Easter and they worked well.} Feel free to experiment with your favorite chocolates!
