When I’m hosting, dessert is one of the first things I try to move off my day-of prep list. Unlike a salad that needs to be dressed before serving or something warm that has to come out of the oven at just the right moment, many fall desserts are perfectly happy (and sometimes even better!) when they’re made ahead.
That means you can bake, chill and check dessert off the list before anyone rings the doorbell. From creamy pumpkin desserts and layered apple bars to simple cakes you can bake the day before, these are some of my favorite make-ahead fall desserts for entertaining.
The Best Make-Ahead Fall Desserts
The easiest way to choose your dessert selections is to think about how you’re serving it. A chilled bar is perfect for a buffet, a Bundt cake makes a beautiful centerpiece, and individual desserts eliminate slicing altogether. Here are some of my favorites!
Pumpkin Cheesecake Bars

If I were choosing one dessert specifically for a fall party or Thanksgiving buffet, Pumpkin Cheesecake Bars with Cinnamon Graham Cracker Crust would be near the top of my list.
They’re creamy and warmly spiced, but much easier to bake and serve than a traditional cheesecake. More importantly for hosting, they need at least several hours to chill before slicing, checking them off the “to-do” list early.
Make-ahead game plan: Bake and chill overnight, then slice before guests arrive. Add whipped cream, caramel or another garnish shortly before serving.
Best for: Thanksgiving, Friendsgiving and fall dessert buffets.
Apple Custard Bars with Brown Sugar Shortcrust

Apple Custard Bars have three layers of fall goodness: brown sugar shortcrust, creamy spiced apple cider custard and a caramelized apple topping.
These are another dessert that actually benefits from advance preparation because the custard needs time to chill completely before you can get those clean, defined slices.
Make-ahead game plan: Bake and refrigerate the bars the day before. Prepare the apple topping separately, then slice and finish the bars closer to serving.
Best for: Dessert tables, brunches and gatherings where you want something a little different from pie.
Pumpkin Panna Cotta

For something that looks elegant but requires almost no last-minute effort, Pumpkin Panna Cotta is hard to beat.
The creamy pumpkin mixture takes only a few minutes to prepare before going into individual glasses or ramekins to chill and set. Because everyone gets their own dessert, there’s also nothing to slice or plate once guests are ready for something sweet.
Make-ahead game plan: Prepare and portion the panna cotta the day before. Just before serving, add a little pumpkin spice, caramel sauce or crumbled gingersnaps.
Best for: Dinner parties, Thanksgiving or a smaller gathering where you want dessert to feel especially polished.
Apple Crumble Cheesecake Bars

If subtle is not the assignment, make Apple Crumble Cheesecake Bars.
A brown sugar shortbread crust is topped with creamy cheesecake, spiced apples, caramel and a buttery oat streusel. They’re decidedly decadent, but bars are easy to slice into smaller portions when you’re serving several desserts.
They also require several hours of chilling, so this is another recipe that practically insists you make it ahead.
Make-ahead game plan: Bake and refrigerate overnight. Slice while chilled and drizzle with extra caramel before serving, if desired.
Best for: Thanksgiving, potlucks and fall gatherings where dessert should feel unapologetically indulgent.
Fall Cakes You Can Bake the Day Before
Not every make-ahead dessert needs to live in the refrigerator. A moist fall cake is one of my favorite entertaining tricks because you can bake it the day before and still have something that looks beautiful enough to anchor the dessert table.
Honey Apple Bundt Cake with Honey Caramel Glaze

My Honey Apple Bundt Cake with Honey Caramel Glaze is moist, warmly spiced and packed with fresh apples and pecans.
The recipe was originally shared with me by a Jewish friend who made it each year for Rosh Hashanah, but it has become one of those cakes I think of throughout the fall season.
Bake the cake ahead, then save the honey caramel glaze for closer to serving so it stays glossy and beautiful.
Make-ahead game plan: Bake the Bundt cake a day ahead and keep it tightly covered. Warm and drizzle the glaze shortly before serving.
Best for: Rosh Hashanah, Thanksgiving, fall dinner parties or a dessert-table centerpiece.
Apple Spice Cake

Apple Spice Cake is for the nights when you want homemade dessert without embarking on a complex baking project.
It’s moist, filled with diced apples and fragrant with cinnamon, ginger, nutmeg and cloves. It’s also unfussy enough that a dusting of powdered sugar is really all it needs, but it never hurts to add Cinnamon Spiced Whipped Cream.
Because the cake stays moist, it’s easy to bake ahead and leave yourself virtually nothing to do before dessert.
Make-ahead game plan: Bake the cake the day before. Once cooled, cover well and add powdered sugar or another simple finish before serving.
Best for: Casual dinner parties, coffee with friends, brunch or an easy addition to a larger dessert spread.
Earl Grey Pumpkin Snack Cake

For a pumpkin dessert that doesn’t taste like every other pumpkin-spice recipe, try Earl Grey Pumpkin Snack Cake.
Earl Grey tea gives both the pumpkin cake and cream cheese frosting an aromatic citrusy note from bergamot. The result still feels perfectly autumnal, just in a slightly more unexpected way.
Make-ahead game plan: Bake the cake ahead and refrigerate once frosted. Let it sit out briefly before serving to take the chill off.
Best for: Afternoon gatherings, tea or coffee, brunch and casual fall entertaining.
Classic Fall Desserts with a Twist
Sometimes you want the flavors everyone expects, just presented in a way that feels a little more interesting.
Amaretto Pumpkin Pie

Amaretto Pumpkin Pie takes the traditional Thanksgiving dessert in a richer direction with almond liqueur and a crunchy almond praline topping.
The filling uses heavy cream rather than evaporated milk, and the amaretti-cookie crust reinforces the almond flavor throughout the dessert.
Pie is also one of Thanksgiving’s original make-ahead heroes: bake it before the day gets hectic, then simply bring it out when it’s time for dessert.
Make-ahead game plan: Bake the pie the day before and chill according to the recipe. Add any final garnish before serving.
Best for: Thanksgiving or any fall dinner where you want pumpkin pie without making the exact same version everyone expects.
Pumpkin Butter Thumbprint Cookies

For something easy to set out with coffee or add to a larger dessert assortment, Pumpkin Butter Thumbprint Cookies are a great choice.
The cream cheese cookie dough is rolled in toasted pecans and filled with spiced pumpkin butter, giving you pumpkin flavor in a small, easy-to-serve bite.
Cookies are especially useful when you’re hosting because guests can help themselves — no knife, plates or formal dessert moment required.
Make-ahead game plan: Prepare and bake the cookies ahead, then store once completely cooled.
Best for: Fall cookie trays, coffee after dinner, Thanksgiving dessert spreads and casual gatherings.
Serve It in Style
A fall dessert table doesn’t need loads of themed decorations to feel seasonal. Let the desserts provide most of the color and texture, then use a few good serving pieces to create height and variation.
Place a Bundt cake or pie on a pedestal stand, arrange bars on a low rectangular platter and use a small tiered stand or compote for cookies. Individual panna cotta glasses can be grouped together on a tray so guests can easily pick one up.
I also like leaving a little breathing room between desserts rather than filling every inch of the table. Add a small bowl of apples or pears, a few scattered pecans or a simple vase of fall branches if you want a seasonal finishing touch.
Most importantly, choose serving pieces and desserts that let you set up the table before guests arrive. A beautiful dessert spread is considerably less charming when you’re still piping, slicing and searching for cake servers while everyone else is having fun.
