Granola is such an incredibly easy snack to make, and quite underrated in my opinion! Whether munching on granola by the handful or adding it as a topping to yogurt or fruit, it’s both satisfying and versatile!

This Spiced Apple Granola is one of my favorites to make in the fall. Not only does it make for an incredible-smelling house when it bakes in the oven, but it also checks the boxes for those warm, fall flavors so many of us love.

This recipe is naturally vegetarian and can be made gluten-free and vegan.

Ingredients

  • Rolled oats
  • Ground cinnamon
  • Nutmeg
  • Ground ginger
  • Sea salt
  • Chopped pecans
  • Ground flax & chia mix
  • 2 tablespoons coconut oil
  • Maple syrup
  • Honey
  • Vanilla extract
  • Chopped dried apples or apple chips

Instructions

Preheat the oven to 375°F. Line a baking pan with parchment paper or a silicone baking mat. Set aside.

In a large bowl, combine oats, cinnamon, nutmeg, ginger, salt, pecans, flax & chia. Set aside.

In a small saucepan, bring coconut oil, maple syrup and honey to a boil, then reduce heat to medium-low and allow to simmer for about 3-4 minutes. Remove from heat and stir in vanilla extract.

Pour the mixture over the oats and quickly stir until everything is coated and combined.

Scoop out onto lined baking pan and bake for about 15 minutes or until just golden and fragrant.

Remove from oven and allow to cool completely before stirring in dried apples or apple chips. Store in an airtight container.

The best way to achieve granola clusters, is to add a beaten egg white to the wet ingredients. Make sure everything is well-coated and bake as directed. Break the granola into chunks or clusters once cooled.

Cool to room temperature. Place the granola in an airtight container and store in a dark, cool place to help keep it fresh.

Can granola be frozen?

If you make a large batch of granola, it can be easily frozen! Simply cool it to room temperature before placing it in a freezer-safe, airtight container or zip-top freezer bag and freeze for up to 5 months.
