    I know I *JUST* wrote a whole post last week about how I'm having a momentary flirtation with the thought of traveling anywhere {everywhere!}, but just to be clear: I NEED A VACATION. Calgon, take me away. 

    This year is proving to be one of the most jam-packed yet between graduations, weddings, bridal showers, blog events and other occasions that I've worked into the calendar and woven seamlessly among all the regular moments, too. While many of them require travel in some capacity, calling those trips a "vacation" would be far from accurate!

    In a strange way, I feel like I've gotten in a comfortable groove over the past few months, and {dare I say it?} am getting closer to finding that delicate balance between work and life. {For this fleeting moment, anyway.} Cole is getting older and is able to entertain himself a bit more and I've become accustomed to the predictable unpredictability of being the mother of a 2.5 year old child. Work-wise, things have been busier than ever, which I am eternally grateful for, but that also means that by the time the day ends, I have the tiniest bit of time to take a deep breath and just be. {Although I have been staying up late to watch seasons past of The Great British Baking Show, and more recently, Anne with an "E", both of which I will discuss at a later date... whether you like it or not.} The routine, while mind-numbing at times, is familiar and welcome in some ways.

    But in other ways, I am craving a change in the routine -- preferably one that allows for simply enjoying the moment rather than planning, being alert and proactive in it. And, if possible, sleeping in. {Can I get an "amen", parents?}

    The next 48 hours are packed to the max to ensure that I get everything prepared for heading out of town on Thursday, but despite the stress of crossing all those "to do's" off the list, I am looking forward to the trip my husband and I have planned for this weekend. I hope that it turns out to be a little more "vacation" and a little less hustle and bustle, because my brain is more than ready to check out for a few days.

    Because my mind automatically goes to a tropical paradise when I think of a "getaway" -- and because my idea of paradise almost always includes cheesecake -- I'm sharing this island-inspired recipe: Mango Key Lime Cheesecake Dip.

    I've definitely been on in a tropical frame of mind in the last few recipes I've shared, and this dip fits right in.

    The flavors of sweet mango and zesty lime shine in this simple recipe that comes together in seconds in the food processor. Served with fresh fruit or graham crackers, it's a dessert or snack that is heavy on temptation and light on guilt -- the base is made with reduced fat cream cheese for that rich, creamy cheesecake flavor without the extra pudge.

    Now, if you'll excuse me, I'm going to get back to my regularly scheduled program... but come Thursday, all schedules are out the window!

    Ingredients
      

    • 1 8oz. block reduced fat cream cheese
    • ¼ cup plain Greek yogurt fat free or low fat if desired
    • ½ cup heaping mango chunks, fresh or frozen & thawed
    • 1 tablespoon honey*
    • 1 teaspoon vanilla extract
    • Zest from a small lime
    • Juice from ½ a lime

    For Garnish/Serving:

    • Lime zest
    • 1 tablespoon crushed graham cracker
    • Lime slice
    • Apple slices banana chunks or fresh pineapple wedges
    • Graham Crackers

    Instructions
     

    • Combine cream cheese, Greek yogurt, mango chunks, honey, vanilla extract, lime zest and juice in the bowl of a food processor. Blend until smooth. (You may have to stop and scrape down the sides once or twice.)
    • Scoop into a serving bowl and garnish with a sprinkle of extra lime zest and crushed graham cracker if desired. Top with a slice of a lime.

    Notes

    *Depending on the ripeness of the mango chunks, you may want to add a bit more honey. Sweeten to taste.
