What is a Fluffernutter?
You might be wondering, "What the heck is a Fluffernutter Latte?", since it's probably not a concoction you've seen in most coffee shops.
Inspired by the comfort classic, the fluffernutter sandwich, this sweet, creamy beverage is the combination of coffee {duh}, homemade peanut butter syrup {more on that below}, frothy, steamed milk and marshmallow fluff.
It's the perfect drink to enjoy by the fire {if you're lucky enough to live in a place that warrants a fire to be lit} or while you snuggle on the couch with your family for some holiday movie-watching.
I can't take all the credit for this dreamy sipper; I stumbled upon this inventive creation a few months ago when I dined at Artisan's Table in Orlando and I just knew it was something I had to try to recreate at home. Luckily, it wasn't terribly difficult, and the result is a simple recipe that I know I'll make time and time again, especially when the mercury begins to drop!
How To Make Peanut Butter Syrup for Coffee
The key ingredient in this Fluffernutter Latte is a homemade peanut butter simple syrup that is extremely easy to make. All you need is:
- Sugar
- Water
- Peanut Butter
To make the syrup, all three ingredients are combined in a small sauce pan and brought to a boil. Once the mixture is bubbling, you can reduce the heat and whisk until both the sugar and peanut butter are dissolved and the mixture looks uniform. That's it! Peanut butter simple syrup.
In this particular recipe, the syrup is enough for two lattes if you use 2 tablespoons {although you can use more if you prefer a sweeter drink, no judging here!}, but it's not hard at all to double or triple the recipe if you're serving a crowd for the holidays.
Any leftover syrup can be used for a variety of purposes, including topping desserts, pancakes, waffles and even flavoring cocktails!
Ingredients
- Granulated sugar
- Water
- Creamy peanut butter
- Strong brewed coffee (or espresso)
- Half and half or milk of choice
- Marshmallow fluff
Instructions
Heat ¼ cup of half and half or milk in a microwave safe cup or on the stove top until just steaming. Use a frother to create foam if desired.
To make the latte, combine the coffee and about 2 tablespoons of syrup in a large mug. Top with frothed milk.
Spoon or pipe marshmallow fluff onto the top. Serve immediately.

Pick your method and make a decent cup!

As a side note, it's totally possible to make this using your favorite milk alternative. Oat milk is my favorite non-dairy milk when it comes to getting frothing!
Recipe FAQ's
Yes, simply brew your regular coffee extra strong (double the grounds) in order to achieve a more espresso-like beverage with regular ground coffee.
Pour milk into a large jar with a lid, leaving plenty of space for the milk to slosh around. (Don't overfill.) Secure the lid and shake the jar for 30-60 seconds until the milk has doubled in volume and become frothy.

Ingredients
- ¼ cup sugar granulated
- ¼ cup water
- 2 teaspoons peanut butter creamy
- 8 ounces strong brewed coffee
- ¼ cup half and half or milk
- 1 tablespoon marshmallow fluff
Instructions
- Brew 8 ounces of your favorite coffee using your preferred method.
- Meanwhile, in a small saucepan, combine sugar, water and peanut butter. Bring to a boil over medium-high heat, then reduce to a simmer and allow to bubble until the sugar is dissolved. Whisk to fully incorporate the peanut butter until the mixture is a fairly uniform syrup. Set aside.
- Heat ¼ cup of half and half or milk in a microwave safe cup or on the stove top until just steaming. Use a frother to create foam if desired.
- To make the latte, combine the coffee and about 2 tablespoons of syrup in a large mug. Top with frothed milk. Lastly, spoon or pipe marshmallow fluff onto the top. Serve immediately.
